In this 90-minute experience, you will learn about the wisdom behind washoku from a registered dietitian with 46 years of professional experience and 20 years of university teaching experience.
Explore the traditional Japanese meal style of “Ichiju Sansai” (one soup and three dishes), the importance of fermented foods, and the role of dashi and miso in the Japanese diet.
You will make your own onigiri (Japanese rice balls) and prepare authentic miso soup while discovering the cultural meaning and nutritional wisdom behind these everyday Japanese foods.
The experience concludes with matcha served in a traditional Japanese setting. You will also learn simple Japanese customs and etiquette, including the meaning of “Itadakimasu” and the Japanese spirit of gratitude for food, nature, and the people who prepare our meals.
